Classic Neapolitan-style pizza dough with a 24-hour cold ferment.

Ingredients

  • 500 gram Bread flour
  • 325 millilitre Water
  • 2 teaspoon Fine sea salt
  • 1 teaspoon Instant yeast
  • 1 tablespoon Olive oil

Steps

  1. Combine flour and salt in a large bowl.(2 min)
  2. Dissolve yeast in warm water and let sit for 5 minutes.(5 min)
  3. Pour water mixture into flour and stir until a shaggy dough forms.(3 min)
  4. Turn out onto a floured surface and knead for 10 minutes until smooth and elastic.(10 min)
  5. Drizzle with olive oil, place in a bowl, cover with cling film and refrigerate for 24 hours.(1440 min)
  6. Remove from fridge 2 hours before use. Divide into 4 balls and let come to room temperature.(120 min)
