Chicken and Rice

A simple one-pot chicken and rice dish with garlic and herbs.

Chicken and Rice

Ingredients

  • 600 gram Chicken thighs
  • 2 cup Basmati rice
  • 500 millilitre Chicken stock
  • 3 piece Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 pinch Black pepper

Steps

  1. Season chicken thighs with salt and pepper.(5 min)
  2. Heat olive oil in a large pot over medium-high heat. Sear chicken until golden on both sides, about 4 minutes per side. Remove and set aside.(10 min)
  3. Sauté minced garlic in the same pot for 1 minute until fragrant.(1 min)
  4. Add rice and stir to coat in the oil. Pour in chicken stock and bring to a boil.(3 min)
  5. Place chicken on top of rice, reduce heat to low, cover and cook until rice is tender and chicken is cooked through.(25 min)
  6. Let rest for 5 minutes before serving.(5 min)
